Why would I take this class?
One of the easiest ‘dishes’ you can to learn to play with your food are vinaigrettes and dressings. They were the first your chef Edie really learned to master. Soon her fridge got emptied out of all those bottles containing crap ‘ingredients’, and different oils and vinegars entered, and every salad got a different combination.
You can learn that too!
In this class we will go beyond following a recipe, but we will play with the oils, vinegars and other ingredients you have in your pantry, creating and tasting your own dressings!
Okay, so what are vinaigrettes and dressings?
You know them as the coating on your salad, but you can use them in many more ways.
There is some discussion on what exactly the difference between dressings and vinaigrettes are, but that’s not really important. Chef Edie thinks that vinaigrettes are an category of dressings, and wants to leave it at that.
More fun will it be to explore what is possible when making them. We will raid your pantry and you’ll never (have to) go back to bottled dressings. Maybe look up a recipe for inspiration, but you’ll learn endless creativity with what you have on hand.
What can you expect?
What the Learn to cook without recipes classes make stand out from other cooking classes, is that in each class we will focus on 1 subject only. That could be a cooking technique, an ingredient, a dish or another theme.
On Monday, January 16th, 2023 we experiment with oil, vinegar and all kinds of ingredients that help you make a stable emulsion. So be ready to raid your cabinets and fridge and learn how you can make a dressing with whatever you have!
Class is open to all dietary preferences, as you can customize your vinaigrettes and dressings with ingredients you already use.

- A few small bottles or containers to save your homemade dressings

About your chef
In her cooking classes, chef Edie loves to explain what happens in your pots and pans. In these 1 subject only cooking classes we will dive a bit deeper than just follow a recipe. It won’t be super science-y, but often we will do experiments so you can taste the difference between various methods, cooking techniques or seasonings. All to empower you to get a bit looser with recipes so you can come a more confident and creative cook.
