Sounds intriguing, but eh … what is a pan sauce?

Will you be convinced if we say it’s the best thing we learned in culinary school?

To put it simply, a pan sauce is a sauce you make in a pan after frying meat, but you can use it after cooking fish, and yes, vegetables in your skillet too.

You’ve probably heard of browned bits, the so called fond, after sautéing or pan-frying. By deglazing your pan with a tasty liquid, you can incorporate them in your sauce, making your meal so much better.

But did someone already explained to you how to make them without a recipe?

That’s what we will do in this class. It might sound a bit too much, 90 minutes to discuss 1 sauce, and yes, we might be done earlier. But it’s such a fun skill, that we truly want you to understand and incorporate into your daily cooking.
We will connect the dots with other techniques and dishes, so you get a true understanding of this essential cooking concept. You will never clean out your skillet without making a sauce first anymore!

About your chef

This class will be taught by chef Edie Dourleijn, once a picky eater who couldn’t cook.

She documented her path to eating and cooking everything as one of the first food bloggers of her home country The Netherlands (in 2006!). To learn more quickly, she looked around for classes that would help her understand what is going on in her pots and pans, but they didn’t exist. Eventually, she ended up at culinary school.

Now chef Edie teaches her Learn to cook without recipes classes for curious cooks who want to become free of recipes. Just like she once was.

Edie also hosts all kinds of entertaining and educational virtual cooking classes to celebrate any occasion with family or friends, or as a (realteam building, receiving 5 star reviews.

What you can expect – the longer version

What the Learn to cook without recipes classes make stand out from other cooking classes, is that in each class we will focus on 1 subject only. That could be a cooking technique, an ingredient, a dish or another theme. We will dive a bit deeper into the subject to help you understand why we do what we do.

At other cooking classes, you will learn this one way the chef teaches you. But will they explain why this way is their favorite and preferred way? Will they discuss the culinary discourse on the subject, the pros and cons of their recipes? We will!

After you’ve signed up, you will get an email with your homework. Yes! 😉

For this class, we will ask you to think about what you know pan sauces, browned bits and deglazing. You also get a grocery and tools list and the Zoom link.

Ten minutes before class starts, we will virtually open our kitchen so we have some time to set up and chat a bit. Then chef Edie will introduce herself, explain the program of the class and we get to cook. She won’t control if you did your homework, so no stickers from us, but being a bit prepared for the class will help you gain confidence and understand what we’re up to.

After class has ended you can enjoy what you’ve cooked.
